½ lb ground chuck ½ lb fish steaks or deboned filets 4 lg crimini or 4 small portobello mushrooms Buns of choice (Kings hawaiian is our fave) mayo, mustard, ketchup, hot sauce, etc 1-3 Cucumbers 1-3 Maui sweet onions 1-2 avocados Paprika (mild or spicy) ¼ c Apple cider vinegar 5 whole peppercorns 2 Allspice (crushed) 1 Bay leaf Brown sugar if desired for bread & butter ½ lb macaroni ½ c mayo ½ cup grated sharp cheddar S&P to taste 1 egg yolk 1 tbsp butter 1 tsp paprika (mild or spicy)

Sliders:
Divide into quarters, season with S&P to taste. Score mushroom caps crosswise. Grill to your liking


Quick Pickles: 
Thinly slice maui onions & cucumbers. Toss with copious amounts of salt. Let sit for 45 min
Add 2 crushed allspice & bay leaf into bowl. Rinse veggies (pull off all spice & bay). Add ¼ c apple cider vinegar. Add brown sugar for bread & butter pickles. Stuff into a jar with allspice, bay, 5 whole peppercorns & a couple of cloves if desired


Mac & Cheese:
Cook pasta al dente. Drain water into a glass bowl. Sit for 1 min. In another bowl, toss pasta with butter. Dump the hot water. Add mayo, cheese, egg yolk. Wisk in a warm bowl. Immediately add hot, drained pasta. Stir until cheese is melted. Garnish with paprika
